Samoa Pretzel Bites via Hunt & Harvest

At the end of the day, you're probably better off just making a pie or other seemingly complex recipe. These are labor intensive and the entire time I felt like a soccer mom slaving over a sheet of wax paper, hands covered in goo. That being said, proceed with caution.

Samoa Pretzel Bites via Hunt & Harvest


2 1/2 cups shredded coconut

10 oz. caramel sauce

100 pretzels (approximately)

6 oz. semisweet chocolate chips


  1. Cover two large cookie sheets with parchment or wax paper. Set aside.
  2. Toast the coconut in a skillet over medium high heat, stirring constantly until lightly golden brown. Set aside 1/2 cup for topping. In a medium bowl, mix together remaining 2 cups of coconut with caramel sauce.
  3. Melt chocolate in the microwave until completely smooth, stirring every 30 seconds.
  4. To assemble bites, place about one tablespoon of filling on pretzel, sandwich together with another pretzel, then dip the entire thing halfway in melted chocolate. Sprinkle toasted coconut on top and set on cookie sheet. Repeat until filling is depleted or until maddening frustration set in.
