Normally I bake something on Sunday and then post it early in the week. This week, I made a funfetti cake. The box kind.
But you (really anyone who can read and stir oil into mix) already know how to make a birthday cake fit for an eight-year-old. So instead, here are some chocolate chip oatmeal bars I made a few weeks ago. "Lazy" because they require one bowl and no mixer.
Full disclosure: these aren't half as good as the funfetti cake.
WHAT YOU NEED:
1 1/2 cups old fashioned oats
1 cup all-purpose flour
2/3 cup brown sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup canola oil
1 1/2 teaspoons vanilla
1 cup chocolate chips
- Preheat oven to 350 degrees. Grease a 9-inch square pan. Mix all ingredients except chocolate chips in a large bowl using a wooden spoon until dough holds together. Fold in chocolate chips.
- Pour dough into prepared pan, using the spoon to press down and into an even layer. Bake for 20-25 minutes or until lightly golden brown.
