Everyone gets excited about pumpkin flavored things come holiday season. But not me.
I'm all about the pecans.
Pecan pie is easy to begin with. But remove the crust-making element? Done deal. And as with any cold-weather recipe, I'm pretty certain these would also be great with a splash of bourbon...
WHAT YOU NEED:
1 1/2 cups flour
1 stick salted butter, cold, cut into small cubes
1/4 cup brown sugar
3/4 cup sugar
3/4 cup corn syrup
2 tablespoons butter, melted
1 tsp vanilla extract
1 1/2 cups chocolate chips
2 cups pecans
- Preheat oven to 350 degrees. Spray a 13" x 9" pan with cooking spray.
- In a medium bowl, cut butter into flour and brown sugar using a pastry blender, until crumbly. Press into prepared pan and bake for 13 minutes or until lightly browned.
- In a medium bowl, combine eggs, corn syrup, sugar and vanilla. Stir in melted butter, then pecans and chocolate chips.
- Pour mixture onto crust layer. Bake for 25 to 30 minutes or until browned and set. Cool completely before cutting.
