Everyone gets excited about pumpkin flavored things come holiday season. But not me.

I'm all about the pecans.

Chocolate Chip Pecan Pie Bars // Hunt & Harvest

Pecan pie is easy to begin with. But remove the crust-making element? Done deal. And as with any cold-weather recipe, I'm pretty certain these would also be great with a splash of bourbon...

Chocolate Chip Pecan Pie Bars -

1 1/2 cups flour

1 stick salted butter, cold, cut into small cubes

1/4 cup brown sugar

3 eggs

3/4 cup sugar

3/4 cup corn syrup

2 tablespoons butter, melted

1 tsp vanilla extract

1 1/2 cups chocolate chips

2 cups pecans

  1. Preheat oven to 350 degrees. Spray a 13" x 9" pan with cooking spray.
  2. In a medium bowl, cut butter into flour and brown sugar using a pastry blender, until crumbly. Press into prepared pan and bake for 13 minutes or until lightly browned.
  3. In a medium bowl, combine eggs, corn syrup, sugar and vanilla. Stir in melted butter, then pecans and chocolate chips.
  4. Pour mixture onto crust layer. Bake for 25 to 30 minutes or until browned and set. Cool completely before cutting.
