Sometimes the easiest recipes are the biggest crowd pleasers. Case in point: Rice Krispies Treats. I can make an impressive tart or biscuits from scratch, but what ends up being the most requested are snacks made out of children's breakfast cereals.
But hey - it's cold outside and when in doubt, whiskey is always a good idea.
WHAT YOU NEED:
5 1/2 cups Rice Krispies
1 stick unsalted butter
1 cup (about 20) soft caramel squares
1 bag (about 10 oz.) miniature marshmallows
1/2 teaspoon salt
2 tablespoons bourbon
1 teaspoon vanilla extract
- Spray a 9-inch square pan liberally with cooking spray. In a large bowl, measure out Rice Krispies. Set aside.
- In a large saucepan, melt butter, caramels and marshmallows, stirring constantly over medium heat until completely smooth. Remove from heat, add bourbon, salt and vanilla. Stir until evenly mixed.
- Pour mixture over Rice Krispies, folding quickly until all cereal is thoroughly coated. Spread into prepared pan, using a spatula covered in cooking spray to pack down. Let cool before cutting into squares.
