These are the "least vegan" vegan thing I've ever eaten. And let me tell you, that is a good thing.
Bonus - you only need four ingredients. And if any of your loved ones ever step foot in a Costco, you probably only need three (I'm looking at you, 30 pound bag of pistachios).
WHAT YOU NEED:
1 12 oz. bag of chocolate chips
1/2 cup coconut milk
Splash vanilla extract
1 cup pistachios, roasted, salted and finely chopped
- Melt chocolate chips in microwavable bowl, stirring every 30 seconds. Once chocolate is smooth, stir in vanilla and coconut milk. Cover and refrigerate for at least four hours.
- Place pistachios in a thin layer on a plate. Shape teaspoon-sized balls of chocolate mixture using hands, then roll in pistachios until coated. Store, covered, in the fridge.
