VEGAN PISTACHIO TRUFFLES

These are the "least vegan" vegan thing I've ever eaten. And let me tell you, that is a good thing.

Bonus - you only need four ingredients. And if any of your loved ones ever step foot in a Costco, you probably only need three (I'm looking at you, 30 pound bag of pistachios).

Vegan Pistachio Truffles // Hunt & Harvest

WHAT YOU NEED:

1 12 oz. bag of chocolate chips

1/2 cup coconut milk

Splash vanilla extract

1 cup pistachios, roasted, salted and finely chopped

HOW TO:

  1. Melt chocolate chips in microwavable bowl, stirring every 30 seconds. Once chocolate is smooth, stir in vanilla and coconut milk. Cover and refrigerate for at least four hours.
  2. Place pistachios in a thin layer on a plate. Shape teaspoon-sized balls of chocolate mixture using hands, then roll in pistachios until coated. Store, covered, in the fridge.
