What can I say? I'm a sucker for any dessert that requires just one bowl and a microwave. Add s'mores to the mix and it's game over.
Side note - apologies for the photo quality. The camera is still somewhere in TSA-land. If you like s'mores in any capacity, you will like these - iPhone photo or not.
WHAT YOU NEED:
1 cup miniature chocolate chips
6 cups Golden Grahams
10 oz. package (6 cups) miniature marshmallows
5 tablespoons butter
1/4 teaspoon salt
1 teaspoon vanilla
- Put the chocolate chips in the freezer while you prepare everything else. Spray a square pan thoroughly with nonstick cooking spray.
- In a large microwavable bowl, combine 5 cups marshmallows and butter. Heat on high for 1 minute, then stir with spatula coated in nonstick spray. Continue heating on high in 20 second increments until completely smooth. Stir in salt and vanilla.
- Add cereal and remaining cup of marshmallows to mixture, stirring quickly until evenly coated. Briefly stir in the chocolate chips, careful not to let them melt.
- Scrape mixture into prepared pan. Press down into an even layer using a spoon (or your hands) coated in nonstick spray. Let set at room temperature for an hour before slicing into bars.
