NOT QUITE WALDORF SALAD

The other day I was craving some kind of crunchy slaw-like salad. My fridge was half-empty (or half full?) so I made a mess of what was left, tossed it all around in a tupperware, and somehow it worked. Exceptionally well. As in, I'll be making this for lunch every day for the indefinite future.

Full disclosure: I'm not a mayonnaise fan, so feel free to amp up the creaminess if that's your thing.

Skinny Waldorf-ish Salad // Hunt & Harvest

WHAT YOU NEED*:

Serves one
1 heaping cup shredded cabbage

1/4 cup shredded carrots

1 small crisp apple, chopped finely (Fuji, Honeycrisp, etc.)

2 tablespoons walnuts, chopped

2 tablespoons raisins (golden preferably)

1 tablespoon apple cider vinegar

2 tablespoons plain greek yogurt

1/2 teaspoon hot honey*

Pinch of salt & pepper, to taste

*Other addition add-in ideas: red onion, purple cabbage, jicama, fennel seeds, celery

**I used Mike's Hot Honey (which is awesome!). Feel free to sub in a combination of honey/agave and cayenne pepper/hot sauce.

HOW TO:

  1. In a medium bowl, combine cabbage, carrots, apple, walnuts and raisins.
  2. In a small bowl, whisk together remaining ingredients to form dressing, tinkering with the ratios to desired thickness and taste.
  3. Pour dressing over salad and toss thoroughly.
