CHOCOLATE CHIP BOURBON PECAN PIE

Per usual, everything is better with bourbon. Also, I'd like to thank Trader Joe's for helping me consistently look like a real baker via frozen pie crusts. Keep up the good work.

WHAT YOU NEED:

1 uncooked pie crust

1 cup sugar

1 cup plus 2 tablespoons dark corn syrup

1 teaspoon salt

3 eggs

1 teaspoon vanilla extract

2 tablespoons bourbon

1/3 cup unsalted butter, melted

1 heaping cup chopped pecans

1/2 cup chocolate chips

HOW TO:

  1. Preheat oven to 350 degrees. Make your pie crust (or thaw it per the directions on the box) and roll out into a 9-inch pie pan. Place in fridge or freezer while preparing other ingredients.
  2. In a medium bowl, whisk together sugar, corn syrup, salt, eggs, vanilla, bourbon and melted butter. 
  3. Sprinkle pecans and chocolate chips in the bottom of prepared pie shell. Give the filling another whisk, then pour it overtop the pecans and chips. 
  4. Place pie pan on a baking sheet and put in the oven. Bake for about 45-55 minutes, or until the filling is mostly set and slightly puffed, with just a bit of jiggle. Cool completely before slicing. I prefer storing in the fridge, and eating it cold, but you do you.
