BANANA PECAN MUFFINS

Surprise! There is a secret ingredient. And it is bourbon. I am a creature of habit.

Banana Bourbon Pecan Muffins

WHAT YOU NEED:

3 ripe bananas

1/3 cup unsalted butter, melted

3/4 cup brown sugar

1 egg, beaten

1 teaspoon vanilla

1 tablespoon bourbon

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 teaspoon baking soda

1 1/2 cups flour

1/2 to 1 cup pecans, chopped

HOW TO:

  1. Preheat oven to 350 degrees. Line a regular muffin tin with paper liners or liberally grease with nonstick spray. Set aside.
  2. In a large bowl, mash the bananas. Stir in butter, sugar, egg, vanilla and bourbon until smooth. Add the spices and salt, stir. Sprinkle baking soda and flour overtop and gentle stir until just incorporated. Fold in the pecans.
  3. Spoon mixture into prepared muffin tin, filling cups 3/4 full. Top with a few leftover pecans. 
  4. Bake for 18-25 minutes, or until a toothpick inserted into the center comes out clean.
