OATMEAL NOT-RAISIN COOKIES

Personally I love raisins, but at least I recognize that I'm fully in the minority. These are awesome though, because even if I'm down the shrivel-y grape-y bits, I'm even more hyped on cranberries and chocolate chips. Problem solved.

Oatmeal Cranberry Chocolate Chip Cookies

WHAT YOU NEED:

1/2 cup (1 stick) butter, softened

2/3 cup brown sugar

1 egg

1/2 teaspoon vanilla extract

3/4 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon salt

1 1/2 cups rolled oats

3/4 cup dried cranberries

1/2 cup chocolate chips

HOW TO:

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, use an electric mixer to cream together butter, sugar, egg and vanilla until light and fluffy. In a medium bowl, whisk together flour, baking soda, cinnamon and salt. Add the dry ingredients to the wet and stir until combined. Fold in the oats, cranberries and chocolate chips. Pop the entire bowl in the fridge for about 10-20 minutes while you do the dishes or whatever.
  3. Spoon heaping tablespoon-sized balls of dough onto the prepared baking sheet, about 2 inches apart. Bake for 10-12 minutes, or until just slightly browned on the edges. Allow to cool on baking sheet for a few minutes before moving to a wire rack to cool completely. In between batches, put the uncooked dough back in the refrigerator.
