TINY FUNFETTI SHORTBREAD

Because I just cannot bring myself to call these "fairy bites." If you're having a birthday party for an eight-year-old though, definitely call them that.

Tiny Funfetti Shortbread

WHAT YOU NEED:

1/2 cup butter, softened

1/4 cup sugar

1/4 teaspoon almond extract

1 1/4 cup all-purpose flour

1/4 teaspoon salt

4 teaspoons sprinkles

HOW TO:

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Line an 8-inch square pan with either parchment paper or plastic wrap, leaving an overhang on the edges.
  2. In a medium bowl, cream together butter, sugar and almond extract. Reduce speed to low and add flour and salt, beating until well mixed. Fold in sprinkles using a spatula or spoon. The dough may appear rather crumbly or sandy - don't worry.
  3. Use your hands to bring dough together, kneading just a few times. Press firmly into a single layer in prepared square pan. Use the overhang to carefully pull the square of dough out of the pan. Slice into squares (about 1/2 inch), and transfer onto prepared baking sheet. Shortbread will not spread much, so they can be placed pretty close together.
  4. Bake for 12-16 minutes, or until corners and bottoms are just beginning to brown.
