EGGNOG BLONDIES

Full disclosure: I don't love eggnog. In fact, it kind of grosses me out. Something about the thickness is just way too much. But these guys? Totally different story.

WHAT YOU NEED:

1/2 cup (1 stick) unsalted butter, softened

3/4 cup brown sugar

1 egg

1/2 cup eggnog

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon nutmeg

1/3 cup chopped walnuts

1/3 cup chocolate chips

1/3 cup white chocolate chips

HOW TO:

  1. Preheat oven to 350 degrees. Spray an 8-inch square baking pan with nonstick spray. Set aside.
  2. In a large bowl, cream together butter and sugar using an electric mixer until light and fluffy. Beat in egg and eggnog until well combined.
  3. Add flour, baking powder and nutmeg to wet mixture, stirring until no flour streaks remain. Fold in walnuts and both kinds of chocolate chips. 
  4. Spread batter into prepared pan and bake for 25 to 35 minutes or until edges are just beginning to brown and a cake tester inserted into the center comes out clean. Cool on wire rack before slicing.
