Full disclosure: I don't love eggnog. In fact, it kind of grosses me out. Something about the thickness is just way too much. But these guys? Totally different story.
WHAT YOU NEED:
1/2 cup (1 stick) unsalted butter, softened
3/4 cup brown sugar
1/2 cup eggnog
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon nutmeg
1/3 cup chopped walnuts
1/3 cup chocolate chips
1/3 cup white chocolate chips
- Preheat oven to 350 degrees. Spray an 8-inch square baking pan with nonstick spray. Set aside.
- In a large bowl, cream together butter and sugar using an electric mixer until light and fluffy. Beat in egg and eggnog until well combined.
- Add flour, baking powder and nutmeg to wet mixture, stirring until no flour streaks remain. Fold in walnuts and both kinds of chocolate chips.
- Spread batter into prepared pan and bake for 25 to 35 minutes or until edges are just beginning to brown and a cake tester inserted into the center comes out clean. Cool on wire rack before slicing.
