I know I probably say things like this all of the time, but this is far and away the best and easiest thing I've ever made. Bold claim, but I don't care. It's insane good.
Imagine a cross between an asiago cheese bagel and a biscuit and a beer. The crunchy outside texture is absolutely unreal. While amazing as just a snack, this is even better topped with a fried egg and maybe some sautéed greens if you're feeling fancy.
WHAT YOU NEED:
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
6 ounce cheddar cheese, grated*
12 ounce can or bottle of beer**
6 tablespoons butter, melted
*Since this recipe is so simple, you want to aim for quality cheese. I used Trader Joe's Unexpected Cheddar and it was perfect. White cheddar is slightly preferable and you want something with a little bit of bite if you're into sharp.
**The stronger your beer is, the stronger the beer flavor. I used Great Lakes Dortmunder Gold and it was a good balance of light and beer-y. Use whatever you've got on hand.
HOW TO:
- Preheat oven to 375 degrees. Spray a 9x5 loaf pan (or similar) with cooking spray.
- In a medium bowl, sift together flour, baking powder and salt. Stir in cheese and beer. Spoon into prepared pan. Pour melted butter over top.
- Bake for 50 to 55 minutes, or until golden brown and set in the middle. Let cool in pan before slicing.
