I wish I could fully explain the taste and texture here to convince you to try these little golden flakes, but it's really beyond words. You definitely won't trick anyone into thinking it's actually bacon, and coconut flavor is nowhere to be found.
Imagine something smoky and savory and sweet all at the time time. Little crispy flakes you can sprinkle on avocado toast, salads or a BLT.
Full disclosure: these were 100% inspired by Beet Jar's legendary bravocado sandwich. If you live in the Cleveland area, get over there immediately. Either way, whip up a batch of these guys. It'll only be 20 minutes of your time.
WHAT YOU NEED:
3 cups large, unsweetened coconut flakes (not shredded)*
3 tablespoons soy sauce
2 1/2 tablespoons liquid smoke**
1 1/2 tablespoons maple syrup
*These can be hard to find. Try the baking aisle of a larger grocery store, or there's always Amazon.
**Check the aisle with the BBQ sauce.
Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.
Measure coconut directly onto parchment paper. Drizzle remaining ingredients over top, tossing until well mixed. Spread into a single layer and bake for 12-15 minutes, flipping halfway through. Store in an airtight container.
