Sometimes you need a weeknight baking project. This one is a perfect candidate. I'd argue that even freaks who are oatmeal-averse will be into these. Not a raisin in sight.
WHAT YOU NEED:
3/4 cup butter, melted
3/4 cup brown sugar
1 cup all-purpose flour
1 cup rolled oats
1 teaspoon baking soda
1 cup chocolate chips
1 1/4 cup caramel sauce*
*I used Trader Joe's Fleur de Sel Caramel Sauce. You could make your own with this recipe.
- Preheat oven to 350 degrees. Spray an 8-inch square pan liberally with cooking spray.
- In a large bowl, stir together butter, sugar, flour, oats and baking soda. Press half of mixture into prepared pan and bake for 10 minutes.
- Remove from oven and sprinkle with chocolate chips. Drizzle with caramel sauce, then sprinkle remaining oatmeal mixture overtop. Bake for another 15-20 minutes or until edges are lightly browned. Center will still be molten and jiggly.
- Allow to cool completely (several hours) before slicing. Store at room temperature.
