CARAMELITAS

Sometimes you need a weeknight baking project. This one is a perfect candidate. I'd argue that even freaks who are oatmeal-averse will be into these. Not a raisin in sight.

Caramelitas

WHAT YOU NEED:

3/4 cup butter, melted

3/4 cup brown sugar

1 cup all-purpose flour

1 cup rolled oats

1 teaspoon baking soda

1 cup chocolate chips

1 1/4 cup caramel sauce*

*I used Trader Joe's Fleur de Sel Caramel Sauce. You could make your own with this recipe.

HOW TO:

  1. Preheat oven to 350 degrees. Spray an 8-inch square pan liberally with cooking spray.
  2. In a large bowl, stir together butter, sugar, flour, oats and baking soda. Press half of mixture into prepared pan and bake for 10 minutes.
  3. Remove from oven and sprinkle with chocolate chips. Drizzle with caramel sauce, then sprinkle remaining oatmeal mixture overtop. Bake for another 15-20 minutes or until edges are lightly browned. Center will still be molten and jiggly.
  4. Allow to cool completely (several hours) before slicing. Store at room temperature.
