FUNFETTI BLONDIES

Don't let this picture fool you - these are good. Maybe not as good as straight from the box funfetti cake, but definitely a solid option in a pinch. Also, I can't even imagine them with a thick layer of frosting or a big ol' scoop of vanilla ice cream. Please report back if you try either.

Funfetti Blondies

WHAT YOU NEED:

1 stick (1/2 cup) unsalted butter, softened

1 cup sugar

1 egg

1 egg yolk

2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1/4 teaspoon baking soda

1/2 teaspoon salt

3/4 cup white chocolate chips

2 tablespoons sprinkles

HOW TO:

  1. Preheat oven to 350 degrees. Line an 8 or 9-inch square pan with tin foil and lightly coat with cooking spray. Set aside.
  2. In a medium bowl, cream together butter and sugar with an hand mixer until light and fluffy. Beat in egg, egg yolk and vanilla until well combined.
  3. Add flour, baking soda and salt, stirring just until no dry streaks remain. Gently fold in chocolate chips and sprinkles. 
  4. Spread batter in an even layer into prepared pan. Bake for 25-30 minutes, or until edges are lightly browned and cake tester inserted in the center comes out clean.
