Don't let this picture fool you - these are good. Maybe not as good as straight from the box funfetti cake, but definitely a solid option in a pinch. Also, I can't even imagine them with a thick layer of frosting or a big ol' scoop of vanilla ice cream. Please report back if you try either.
WHAT YOU NEED:
1 stick (1/2 cup) unsalted butter, softened
1 cup sugar
1 egg yolk
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup white chocolate chips
2 tablespoons sprinkles
- Preheat oven to 350 degrees. Line an 8 or 9-inch square pan with tin foil and lightly coat with cooking spray. Set aside.
- In a medium bowl, cream together butter and sugar with an hand mixer until light and fluffy. Beat in egg, egg yolk and vanilla until well combined.
- Add flour, baking soda and salt, stirring just until no dry streaks remain. Gently fold in chocolate chips and sprinkles.
- Spread batter in an even layer into prepared pan. Bake for 25-30 minutes, or until edges are lightly browned and cake tester inserted in the center comes out clean.
