Full disclosure: I did not use a real recipe here. Luckily, banana bread is one of those rare impossible-to-mess-up baking unicorns. That being said, feel free to play with this if you make it. Hate coconut? Skip it. Sub in peanut butter chips. Drizzle Nutella on top. Follow your heart. 

Chocolate Chip Coconut Banana Bread


1 3/4 cup all-purpose flour

1/2 cup brown sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon cinnamon

2 eggs, beaten

2-3 mashed ripe bananas

1/3 cup cooking oil

2 tablespoons milk (I used almond)

1 teaspoon vanilla

1/2-1 cup coconut (I used a mixture of flaked and shredded)

1 cup chocolate chips


  1. Preheat oven to 350 degrees. Grease a loaf pan with cooking spray. Set aside.
  2. Stir together flour, sugar, baking powder, baking soda, salt and cinnamon in a large bowl. Add wet ingredients and slowly stir. Fold in coconut and chocolate chips. Pour batter into pan.
  3. Bake for 50-60 minutes or until a cake tester/toothpick inserted into the center comes out clean. If the top is browning too quickly for your liking before bread is cooked through, cover with foil 35-40 minutes into baking.
  4. Cool on a wire rack before slicing.
