PEANUT BUTTER BLONDIES

For this week's "stack o' bars," we're going back to basics. Way basic. No jelly, no salted caramel, no butterscotch. Just peanut butter. If you like extra flair, feel free to add in any other riff raff you can dream up.

Peanut Butter Blondies

WHAT YOU NEED:

1 stick (1/2 cup) unsalted butter, melted

1 cup brown sugar

1 egg

1 teaspoon vanilla

1/2 cup peanut butter

1/4 teaspoon salt

1 cup all-purpose flour

1/2 - 1 cup roasted salted peanuts, roughly chopped (optional)

HOW TO:

  1. Preheat oven to 350 degrees. Coat an 8 or 9-inch square pan liberally with nonstick spray. Set aside.
  2. In a large bowl, combine the melted butter and sugar. Stir in the egg and vanilla until smooth. Add peanut butter and mix until smooth.
  3. Gently stir in the flour and salt until just combined. Fold in half of chopped peanuts (optional). 
  4. Pour mixture into prepared pan. Top with remaining peanuts (optional). Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
