WHITE CHOCOLATE TROPICAL CAKE MIX COOKIES

Word of warning: these guys are a bit niche. I fully recognize that the chances of you having a few cups of yellow cake mix laying around are slim. But in case you ever find yourself in such a predicament (say, after you make Funfetti Rice Krispie Treats), here's your solution.

Tropical White Chocolate Cake Mix Cookies

WHAT YOU NEED:

1/4 cup (1/2 stick) butter, softened

1 egg

1 teaspoon vanilla

1 heaping cup yellow cake mix

1/2 cup sweetened shredded coconut

1/3 cup diced dried tropical fruit (I used pineapple and flattened banana*)

1/3 cup white chocolate chips

HOW TO:

  1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper. Set aside.
  2. In a large mixing bowl, combine softened butter, egg and vanilla and stir until relatively smooth (there can be some buttery lumps - no worries). Add the cake mix and stir until a dough forms. If it looks runny, stir in more cake mix, one tablespoon at a time. I ended up using about 1 1/3 cup total.
  3. Fold in the coconut, dried fruit and chocolate chips. Place the bowl in the freezer for 15 minutes to solidify. Do not skip this step or you'll be sorry!**
  4. Remove dough from freezer and scoop roughly tablespoon-sized balls onto the prepared cookie sheet, a few inches apart. Bake for 10 minutes or until bottoms are starting to brown. Allow to cool on the baking sheet before attempting to move or eat. I know, it's hard. Life is hard.

*Trader Joe's is a magical place. "Nothing But Flattened Bananas" are better than they have any right to be.

*Sort of kidding. If you don't chill the dough, your cookies will just turn out flat and thin and sad.
