WHAT YOU NEED:
3/4 cup granulated sugar
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
1 cup powdered sugar
- In a medium bowl, use an electric mixer to beat together the granulated sugar and oil until fluffy, about two minutes. Beat in eggs and vanilla, until thoroughly mixed.
- Sprinkle flour, cocoa powder, baking powder, and salt over wet mixture (or sift them together first in a small bowl if you're a goody goody). Fold into wet mixture until just combined. Cover dough with plastic wrap and refrigerate for at least 2 hours, or until chilled all the way through.
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Fill a small bowl with the powdered sugar. Scoop 1-inch balls of dough (about a tablespoon-ish), and roll in powdered sugar until completely coated. Place on baking sheet two inches apart.
- Bake for 8-11 minutes, or until edges are just beginning to set. Allow to sit for 2 minutes on baking sheet before moving to a wire rack to cool completely.
