chocolate crinkle cookies


3/4 cup granulated sugar

1/4 cup vegetable oil

2 eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1 teaspoon baking powder

1/4 teaspoon salt

1 cup powdered sugar


  1. In a medium bowl, use an electric mixer to beat together the granulated sugar and oil until fluffy, about two minutes. Beat in eggs and vanilla, until thoroughly mixed.
  2. Sprinkle flour, cocoa powder, baking powder, and salt over wet mixture (or sift them together first in a small bowl if you're a goody goody). Fold into wet mixture until just combined. Cover dough with plastic wrap and refrigerate for at least 2 hours, or until chilled all the way through.
  3. Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Fill a small bowl with the powdered sugar. Scoop 1-inch balls of dough (about a tablespoon-ish), and roll in powdered sugar until completely coated. Place on baking sheet two inches apart.
  4. Bake for 8-11 minutes, or until edges are just beginning to set. Allow to sit for 2 minutes on baking sheet before moving to a wire rack to cool completely.
