Seasonal, or whatever.
WHAT YOU NEED:
1/2 cup (1 stick) unsalted butter, melted
1/4 cup brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
6 tablespoons pumpkin puree
1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 1/2 teaspoons pumpkin pie spice
3/4 cup chocolate chips
- In a large bowl, whisk together the melted butter and both sugars. Add in vanilla and pumpkin and whisk until no lumps remain.
- If you're a perfectionist, sift together flour, salt, baking powder, baking soda and spices before adding them to the wet mixture. Otherwise, gently mix everything together until no flour-y streaks remain. Fold in chocolate chips. Place dough in refrigerator to chill for 30 minutes.
- Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Place heaping tablespoon-sized balls onto prepared baking sheet. Press down the tops slightly with the back of a spoon or your hand. Bake for 8-10 minutes, or until edges are just beginning to set. Let cool for 10 minutes on cookie sheets before transferring to wire rack to cool completely.
