M&M COOKIES

Sunday was my cat's birthday. I made these for the occasion. If he weren't a cat and could eat them, I'm sure he'd be like "wow these are the best cookies I've ever eaten." He's toiling away as we speak on his latest batch of book reviews though, none the wiser to the whole birthday bonanza.

M&M Cookies

WHAT YOU NEED:

1/2 cup (1 stick) unsalted butter, softened

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1/2 teaspoon vanilla extract

1 1/2 cups all-purpose flour

3 tablespoons instant vanilla pudding mix

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup chocolate chips

1 - 1 1/2 cups M&M's

HOW TO:

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. In a large bowl, cream together butter and sugars using an electric mixer. Beat in egg and vanilla. Use a spoon or spatula to stir in flour, pudding mix, baking soda, and salt until just combined. Fold in chocolate chips and M&M's.
  3. Scoop heaping tablespoon-sized balls of dough onto prepared baking sheet. Bake for 10 to 12 minutes, or until just golden brown on the edges. Let rest on baking sheet before transferring to wire rack to cool completely.
