This basically tastes like a citrus donut in cake form. Don't skimp on the glaze.

grapefruit cake



1 cup granulated sugar

1 tablespoon grapefruit zest

2 eggs

1/3 cup vegetable oil

2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

3/4 teaspoon salt

2 teaspoons baking powder

3/4 cup plain greek yogurt

5 tablespoons grapefruit juice


3 tablespoons grapefruit juice


1-3 tablespoons grapefruit juice

pinch of salt

1/2 - 1 cup of powdered sugar


  1. Preheat oven to 350 degrees. Line a loaf pan with parchment paper, allowing overhang on the sides. Lightly coat with nonstick spray. 

  2. In a large bowl, use the back of a wooden spoon to work the grapefruit zest into the granulated sugar until fragrant and uniform in color. Add eggs, oil and vanilla, stirring to combine. Stir in flour, salt, baking powder and yogurt until combined. Fold in grapefruit juice. Pour mixture into prepared pan, smoothing out the top.

  3. Bake for 45-60 minutes, or until lightly browned and a tester inserted into the center comes out clean. Remove from oven and poke cake with small holes using a toothpick or knife. Spoon three tablespoons of grapefruit juice over top. Let sit for at least 15 minutes before removing the cake from pan and onto a wire rack.

  4. Make the glaze. In a small bowl, stir powdered sugar into grapefruit juice and salt until desired consistency is reached. Pour glaze over cake. Allow glaze to set before slicing, about 30 minutes.
