This tastes like if custard and bourbon had a baby cradled in butter. Life is short, so unless you're feeling ambitious, get the store-bought piecrust. Trader Joe's has an insanely great version in their freezer section.

bourbon buttermilk pie

1 unbaked pie crust, defrosted

3 eggs

1 1/4 cups sugar

3 tablespoons all-purpose flour

1/4 teaspoon salt

1/2 cup (1 stuck) unsalted butter, melted

3/4 cup buttermilk

3 tablespoons bourbon or whiskey

1 teaspoon lemon zest

1 1/2 teaspoons vanilla extract

1/8 teaspoon nutmeg

  1. Place one rack in the bottom of the oven and one in the center. Preheat to 325 degrees. Roll out pie crust into pan, crimping edges as desired. Place in fridge while preparing filling.
  2. In a large bowl, whisk together eggs and sugar, then add flour, salt and melted butter, mixing until well-combined. Gently stir in buttermilk, whiskey, lemon zest, vanilla and nutmeg. Pour into prepared crust.
  3. Bake for 20 minutes on lower rack, then transfer to center rack for an additional 40 minutes. Check pie regularly in the final 20 or so minutes, making sure crust isn't browning too quickly. If it is, shield with aluminum foil.
  4. Remove from oven and allow to cool on a wire rack before slicing. Store in the refrigerator for up to three days, or freeze for up to two months.
