I used Trader Joe's Crunchy Salted Peanut Butter with Flax and Chia Seeds for these babies. The result was something like a sweeter, more complex trail mix. That being said, if you want something less crunchy (in both senses of the word), use Skippy or whatever.
WHAT YOU NEED:
1 egg, beaten
1 cup nut butter*
1/2 cup brown sugar, packed
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup chocolate chips or chunks
*peanut, almond, cashew, choose your own adventure
- Preheat oven to 350 degrees and line a baking sheet with parchment paper. Set aside.
- In a medium bowl, mix together egg, nut butter, brown sugar, baking soda, and vanilla until well-combined. Fold in the chocolate chips.
- Scoop tablespoon-sized balls of dough onto prepared baking sheets. Press down tops lightly with a fork. Bake for 10 minutes. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
